This is a baked loaf with beef, rice, vegetables, cheese, and egg. It’s like a meat-loaf, but (dare I say it?) better! One of the campers at #TheField said: “This is the best food I’ve had since I’ve been here, and I’ve been to a bunch of restaurants!” A guy living at Camp United We Stand said: “It’s great! I love it! But what is it?”
Nothing warms a cook’s heart like praise for the food! And the fact that it is a mysterious original recipe – custom made for delivery to folks living outside – just adds to my satisfaction.
The mystery is easily dispelled – here’s the recipe for those who may have an interest. (To do it my way, you’ll need an 18-cavity mini-loaf pan, like the Wilton “Perfect Results,” available online.)
1 tray = 18 loaves (1/2 cup each)
Preheat oven to 350 degrees.
In a large bowl, mix:
- 3 cups cooked ground beef
- 3 cups cooked rice
- 3 1/2 cups frozen mixed vegetables
In another bowl, mix the sauce:
- 3/4 cup ketchup
- 2 Tbsp prepared mustard
- 1 Tbsp Worcestershire sauce
- 1 tsp vinegar
- 1 Tbsp onion powder
- 1 1/2 Tbsp garlic powder
- 2 tsp dried thyme
- 1 tsp salt
- 1 tsp pepper
Stir sauce together, then add:
- 9 eggs, and mix.
Combine sauce with meat/rice/veggie mixture, mix well.
- 3 cups shredded cheese (e.g. Cheddar/Jack), and mix.
Dispense by 1/2 cup measure into greased 18-cavity mini-loaf pan.
Bake for 30 mins. Allow to cool 5-10 mins before removing loaves from pan.
I’ve been eating them for breakfast. Yum!
